Cheats quiche for lunchbox


Cheats Quiche w/ Higher Protein - makes 4 portions
1 tortilla wrap
3 eggs
100g cottage cheese
½ red pepper, sliced
20g or a handful baby spinach
70g or a handful grated cheese (I used a mix of cheddar and mozzarella)
Salt and pepper to season
(try changing the flavour with ham, peperoni, smoked salmon, onion, mushrooms, fresh herbs or feta)

Step 1: Preheat the oven 170ºc. Use an 8 inch or 9 inch dish or cake tin.

Important: Add a piece of non-stick parchment paper to the dish, this will prevent the tortilla wrap from sticking or if the egg leaks out help too, and it will make it easier to remove once cooked. (not shown in the video)

Step 2: Place the tortilla on top of the paper in the tin, gently push it down to create a bowl shape. Crack the eggs in and add the cottage cheese, season and whisk with a fork.

Step 3: Next add the sliced red pepper and baby spinach, push down with the back of the fork. Sprinkle the cheese on top and 15-20 minutes, until the eggs have set and the cheese has melted.

Leave to cool for a few minutes then remove from the tin. Slice and serve with salad.

Note: If the bottom is soggy and soft, try toasting (after removing from the tin) if possible place the quiche on a non-stick dry frying pan on a medium heat, but be careful not to let it burn.

Eat hot or cold.

Storage: Keep in the fridge for 3 days.
Reheat in the oven or air fryer 180c for 5 min
