Pippa's granola

60 g Slivered Almonds
200 g Oat Bran (or regular oats)
100 g Pecans or walnuts, roughly chopped
50g hazlenuts roughly chopped
100g Mixed Seeds - pumpkin, sunflower, sesame, etc
2 tbsp Chia Seeds
3 tbsp Milled Flaxseed (I use the one mixed with almonds, brazil nuts, walnuts and Q10)
2 tsp Ground Cinnamon
4 tbsp Honey (c 70g)
100g Almond Butter (or peanut)

(optional) 25g Coconut Oil or other low-taste oil - if you increase this, can decrease PB. Orig recipe was 100g veg oil, 25g PB.
  1. Heat the oven to 160°C fan.
  2. In a large bowl, mix together all the dry ingredients (everything except the coconut oil, honey and almond butter) along with a pinch of salt.
  3. In a separate bowl, mix together the coconut oil, honey and almond butter until combined (I blast for 60s in microwave to help peanut butter mix)
  4. Stir the wet ingredients through the dry mixture until everything is coated. (I use stand mixer)
  5. Spread the granola mix out onto a lined tray, in a single flat layer.
  6. Bake for 20 mins, checking halfway and mixing up a bit.
  7. Enjoy immediately or store in an airtight jar for up to a few weeks.
(based on Zoe granola with more oats, more seeds and nuts, less oil, more peanut butter)
