Chocolate Pot

Ingredients
175 g silken tofu
50 g dark chocolate (70% cocoa solids or more)
1 tablespoon of coconut oil (approx. 10 mls)

Method
1. Place the tofu in a food processor and blend until smooth.
2. Place a bowl over a saucepan of simmering water (do not let the bowl touch the water).
Break up the chocolate and add to the bowl with the coconut oil. Heat gently, on a low heat
until melted, stir occasionally.
3. Add the chocolate to the tofu in the food processor and blend until smooth.
4. Transfer into serving glasses or ramekins and chill in the fridge until set (approximately an
hour).
You can add a homemade caramel sauce and add 30 kcals per serve (190 kcals total per serve).
Ingredients for caramel sauce – 1 tablespoon maple syrup, 2 ½ tablespoons of milk, ½ tsp vanilla
essence, 1 tsp peanut butter.

Method – Place all the caramel ingredients in a food processor and blitz until you get a smooth
sauce. Do this prior to stage 1 in above method and then add the tofu and blitz until smooth,
continue method.
