Thai salmon bake

Recipe (serves 4)

4 Salmon fillets
100gms Thai green curry paste
400mls coconut milk
250gms Basmati rice
150mls boiled water
5 mankrut lime leaves
2 sticks lemon grass
4 spring onions
4 tablespoons fish sauce (soy sauce if vegan)
200gms asparagus spears
Red chilli, spring onions & coriander to serve

1️⃣ Pre heart the oven to 180C
2️⃣ Take a tablespoon of the Thai green curry paste and rub it all over the salmon fillets, set them aside. Roughly chop the asparagus
3️⃣ Put the lemon grass, lime leaves, spring onions, green paste, coconut milk, fish sauce, water & rinsed rice in the tray & mix well
4️⃣ Cover with tin foil and bake in the oven for 30 minutes
5️⃣ Uncover, stir the rice (the edges may be more cooked than the middle bits so stir to swap them over) Nestle in the salmon fillets into the rice and add the asparagus, cover again
6️⃣ Bake for 30 more minutes in the oven until all rice is cooked through
7️⃣ Garnish with spring onions, coriander & chilli & serve right away
