Chicken and bacon orzo pasta bake


Recipe serves 4

Ingredients.
.
300g orzo
500g chicken (diced)
150g bacon (diced)
1tbs smoked paprika
1tbs garlic granules
1/2tbs oregano
1tsp salt
2 cloves garlic (finely grated)
1tbs tomato purée
1tbs white wine vinegar
500g passata
120ml elmlea light single cream
60g mozzarella (grated)
Fresh parsley to garnish

Method.
.
Pop your orzo into boiling water with plenty of salt. 
Season the chicken and fry it off with the bacon until cooked. 
Add your garlic, tomato purée and white wine vinegar and cook for a minute or so. 
Then add in the passata and cream and cook for a few minutes or until the chicken is cooked through. 
Add in the cooked pasta and mix. 
Add in the mozzarella and some more pasta water until you get the perfect creamy consistency. 
Check for seasoning and then garnish with parsley and chilli flakes (optional).

Garlic breadcrumb
.
Ingredients
.
2 slices bread
1tbs garlic granules
1/2tbs parsley
1/2 tsp salt
1 tbs light butter
.
Method
.
Blend your bread into breadcrumbs then add in the seasoning and mix together. Melt the butter in a pan and add in the breadcrumbs until crispy and golden. Sprinkle over pasta.
