Farinata - light lunch


Serves 4

150g chickpea flour
3tbsp EVOO
150ml water
Salt (pinch)
Rosemary
For top: cherry tomatoes, red onion, olives

Heat oven to 200C, 180C fan

Grease pan and place in the hot oven (30cm)
Put chickpea flour in a bowl, whisk in water and EVOO and salt.
Chop up toppings
Pour into hot pan, top and bake for 3p mins until golden
Serve w salad, some dips of as an alternative to break w soup.
