Marinades
Chicken
Soy and orange
2 oranges, 4 tbsp soy sauce, 2 tbsp olive oil, 1 tbsp paprika, few sprigs rosemary, 2 dashes Tabasco, 2 crushed garlic cloves. Juice oranges and combine all ingredients, including orange skins. Marinate chicken pieces for 6-12 hours.
Zesty chilli and thyme
Rind of 2 preserved lemons, 2 garlic cloves, few sprigs thyme, 1 tsp honey, 1 tbsp olive oil, 1 green chilli, deseeded. Blitz ingredients together and smear over chicken pieces. Marinate for 6-12 hours.
Buttermilk with garlic and parsley
100ml buttermilk, 1 tbsp olive oil, 4 crushed garlic cloves, 1 chopped bunch of parsley, salt and pepper. Combine all ingredients and marinate chicken pieces for 6-12 hours.
Tahini
2 tsp ground cumin seeds, toasted and crushed with a pestle and mortar with 2 grated garlic cloves; mix together with 80g tahini, the juice of a lemon, a generous pinch of cayenne pepper, 1 tbsp hot paprika, 2 tbsp olive oil and salt and pepper. Marinate chicken pieces for 6-12 hours.
Beef
Spicy Thai
3 tbsp soy sauce, 1 tbsp Thai fish sauce, 2 tsp sugar, 2 crushed garlic cloves, 1 chopped red chilli, 1 tbsp vegetable oil, black pepper. Combine all the ingredients and marinate any cut of beef for 6-12 hours.
Oregano and paprika
2 tbsp sweet paprika, 1 tsp cayenne, 2 crushed garlic cloves, 1 tsp dried oregano, 1 tbsp red wine vinegar, 100ml olive oil, salt and pepper. Combine all the ingredients and use to marinate any cut of beef for 6-12 hours.
Rosemary and mustard
6 tbsp Worcestershire sauce, 2 tsp Dijon mustard, 4 chopped sprigs rosemary, 2 tbsp olive oil. Combine all the ingredients and smear over any cut of beef; marinate for 6-12 hours.
Lamb
Ginger and fresh herb
1 large handful mixed herbs (eg mint, coriander, parsley), 2 garlic cloves, 1 tbsp grated ginger, 2 red chillies, juice 1 lemon, 2 tbsp vinegar, 2 tbsp maple syrup, 2 tsp salt, 100ml olive oil. Blitz and use to marinate any cut of lamb for 6-24 hours.
Lemon and garlic
Zest and juice 1 lemon, 2 garlic cloves, 1 shallot, 1 bunch oregano or marjoram, 100ml olive oil, salt and pepper. Finely chop the lemon rind, garlic, shallot and herbs. Mix together, spread over any cut of lamb and marinate for 6-24 hours.
Spiced yoghurt
1 tbsp grated ginger, 2 crushed garlic cloves, 100g Greek yoghurt, 1 tbsp paprika, 1 tbsp cumin, 2 tsp garam masala, 1 tsp Kashmiri chilli powder, juice 1 lime, salt and pepper. Combine all ingredients, spread over any cut of lamb and marinate for 6-12 hours.
Fish
Lime and cumin
2 tbsp vegetable oil, juice 1 lime, 1 crushed garlic clove, 1 tsp chilli powder, ½ tsp cumin powder, ½ tsp paprika, pinch cayenne, salt and pepper. Combine all the ingredients and marinate fish fillets for 20-30 min.
Sesame and ginger
1 tsp grated ginger, 1 crushed garlic clove, 4 tbsp soy sauce, 2 tbsp honey, 2 tbsp rice wine vinegar, 1 tsp sesame oil. Combine all the ingredients and marinate fish fillets for 20-30 min.
Tamarind and coriander
1 tsp ground coriander, 1 tsp ground cumin, small pinch cayenne, pinch salt, 2 tsp tamarind concentrate, 1 tbsp chopped fresh coriander. Combine all ingredients and smear over fish fillets. Marinate for 20-30 min.
