Sausage Casserole (BBC/Hairy Bikers)
With a couple of mods

For 4-5
8 sausages
6 rashers streaky bacon cut into 2cm strips
2 onions thinly sliced
3 garlic cloves, crushed
1 tsp smoked paprika
400g tin chopped toms
2 Tbsp tom puree
1 Tbsp worcestershire sauce
1 Tbsp dark brown sugar
1 tsp mixed herbs
3-4 fresh thyme sprigs
2 bay leaves
200ml red wine
400g tin butter beans (or mixed), rinsed and drained
S&P
Serve with rustic bread slices / mashed pot
In a big le crueset -
1. Brown sausages in a little oil, 10 mins, set aside
2. Fry bacon, set aside
3. Fry onions and garlic until soft, 5 mins. Sprinkle over paprika, cook 1 min more
4. Stir in toms, stock, puree, worcestershire sauce, brown sugar, herbs, wine. Bring to simmer
5. Put the sausages and bacon back in. Reduce heat, adjust to a simmer, leave 20 mins with lid on ajar.
6. Stir in beans, cook for 10 mins more, until sauce thick.
Can let sit for as long as is convenient at this point.
Season and serve.
Freezes well.
