One pan baked eggs


Ingredients

  • 2 tbsp olive oil
  • 2 garlic cloves, chopped
  • 1 pack of diced pancetta
  • 350g baby plum or cherry tomatoes, halved
  • 1 large onion, finely diced
  • 1 red pepper, diced
  • 5 mushrooms, sliced
  • 1.5 tbsp chopped oregano or thyme leaves
  • Grated Parmesan or vegetarian alternative
  • 8 large eggs

  1. Preheat the oven to 200°C, fan 180°C, gas 6.

    Fry the pancetta in a small hot pan for 5 minutes.

    Put the olive oil, onion, pepper mushrooms and garlic in a large ovenproof frying pan and place over a high heat for 5 mins. Throw in the tomatoes and toss together well, adding seasoning. Add the pancetta. Transfer the pan to the oven and roast for 15 minutes, until the tomatoes are just tender.
  2. Remove the pan from the oven, stir in the oregano or thyme. Flatten the mixture out and push it all the way to the edge before sprinkling with the Parmesan. Crack the eggs on top and season them lightly. Bake in the oven for about 10 mins minutes, until the whites are set, and the yolks are cooked to your liking.
