Bantar’s gammon

1 hr come to room temp

Cover cold water saucepan. Boil then throw away. 
New water. Add orange onion thyme. Bring to boil. Simmer 2.25hrs. Internal temp 63C.
Can use water for stock.
Allow to cool 
Remove skin
Cut diagonals into thin later fat
Insert clove 
3tbsp marmalade 3tbsp English mustard rub on half
In 200c oven 15 mins
Re spread glaze
Another 15 mins -30 mins in oven until glaze set.
Let it rest 5 mins.
