Tarte tatin

In tarte tatin tin
- dissolve 100g caster sugar - keep pan moving to prevent burning. Aim for light golden colour
- add apple (peeled & cut into wedges) - more than you think. Double layer good
- 250C oven 10 mins to cook apple
- Add butter approx 100g (recipe says this and it is yummy but I think you could reduce)
- Add layer puff pastry (250g - half a pack) , it shrinks so make it large
- 220C for 20 mins

Additional flavours: cardemon is good

Banana variant - with rosemary.
