Boxxfresh Veggie Stir-Fry Jumble


This is a delicious jumble to make when you've got those odd bits and bobs left in the fridge to use up… use the ingredients list as a guideline adding what you have available! 

Veggie Stir-Fry Jumble


Ingredients to serve 4:
2-3 cloves garlic, finely diced
1 or 2 chillies, seeded and finely diced
A thumb sized piece of ginger, grated or finely diced
1 or 2 peppers, seeded and diced
A handful of mushrooms, diced
2-3 sticks of celery (or carrots)
3-4 spring onions or 2 red onions
2 courgettes, topped, tailed and diced
3 or 4 stems of Tenderstem Broccoli, roughly chopped
Cooked wild rice
Tamari Sauce
Rapeseed oil or olive oil

Method:
1. Place a large wok or frying pan over a high heat and pour in 1 tablespoon of rapeseed or olive oil. 
2. Add the garlic, chilli and ginger. Allow it to sizzle for 30 seconds, stirring regularly.
3. Add the mushrooms and allow them to fry for 3 or 4 minutes, stirring regularly before adding the peppers, celery, onions and courgettes. 
3. Stir-fry the veggies for a further 3 or 4 minutes until the veggies are fried on the outside but still have a little ‘bite’ in the middle.
4. Add the Tenderstem and rice, continue to stir fry for a further minute or two. Season a 2 tablespoons of Tamari sauce, or to your taste.
