Mexican frittata

Mexican Frittata [Recipe]

Ingredients
  • 6 eggs
  • ¼ cup milk or heavy cream
  • 1 Tbsp olive oil
  • ½ cup chopped onion
  • 2-3 garlic cloves, minced
  • 2 Tbsp. cilantro, minced and divided
  • ½ jalapeno. minced (seeds removed)
  • 1 cup black beans, drained and rinsed
  • 1 cup chopped tomatoes
  • ¾ tsp salt
  • 1 tsp taco seasoning
  • ½-1 cup Mexican cheese blend
  • Toppings:
  • More cilantro
  • sliced avocado
  • salsa
Instructions
  1. Preheat oven to 400 and whisk eggs with milk in a small bowl, set aside.
  2. Turn stove to medium-high heat and add oil to an oven-safe non-stick skillet. Add onions and saute until softened, about 3-5 minutes.
  3. Add garlic, 1 Tbsp. cilantro and jalapeno and saute 1 more minute.
  4. Turn down heat to medium and add beans and tomatoes and stir for about another minute or two. Mix in salt and taco seasoning and stir until well combined. Sprinkle cheese evenly over the dish.
  5. When cheese melts, add the egg mixture until everything is covered. Let it sit on medium heat until the sides begin to set. Put in the oven for 8-10 minutes or until cooked through. Top with remaining cilantro.
