Gingerbread men

272g flour (2 cups)
2 tsp powdered ginger
1 tsp powdered cinamon
0.5 tsp ground nutmeg
0.25 tsp ground cloves
0.5 tsp salt
0.5 tsp bicarb of soda
113g butter (1/2 cup)
55g dark brown sugar (1/4 cup packed)
1 egg
1 tsp vanilla extract
113g molasses/black treacle
Ingredients
- Mix together dry ingredients
- Cream together butter and sugar then add egg, vanilla and molasses
- Combine until just together
- Shape into disk and refrigerate for one hour
- Roll out to two 10p coin thickness, cut out shapes, chill again
- Oven 180C / 160C fan, 10 mins until risen and puffy and set
2020 - made a double batch, enough for gingerbread house cookie cutters and 6 men.
Royal icing (optional)
- 190g icing sugar, sifted (1.5 cups)
- 0.125 tsp cream of tartar
- 1 large egg white
- 0.5 tsp vanilla extract

0.5tsp vanilla
whisk together the sugar and cream of tartar.
Add the egg whites and beat until combined, scraping down the side of the bowl halfway through, about 30 seconds.
Add the vanilla and beat until combined.
Thin the icing with 1 to 2 teaspoons of water and beat for 3 minutes on medium-high speed.
Transfer the icing to a small piping bag with a very small plain tip. Decorate the cookies with the royal icing as you like.
