Wheatgerm parmesan crackers
Ingredients
- 80g / 3/4 cup wheat germ
- 90g / 3/4 cup white whole wheat flour
- 50g / 1/2 cup grated parmesan cheese
- 1/2 teaspoon salt
- 56g / 1/2 stick / 1/4 cup unsalted butter, cut into cubes and chilled
- 60ml / 1/4 cup water
Preparation
- 1. Preheat the oven to 350 F.
- 2. Place the wheat germ, flour, cheese and salt in a food processor and pulse to combine.
- 3. Add the butter and pulse until the mixture resembles coarse meal.
- 4. Add the water and continue to pulse until the dough comes together.
- 5. Remove the dough from the food processor, shape into a disk, and roll out between two pieces of parchment paper to 1/4 - 1/2 inch thick.
- 6. Cut dough into 2-inch square crackers, or use your favorite small cookie cutters to cut dough into shapes.
- 7. Place the crackers on a Silpat or parchment-lined baking sheet and bake for 15-18 minutes, until golden brown.
