Asma's Hummus Recipe
Hummus Recipe adapted from Joy of Cooking
Ingredients:
1 (15 ounce) can chickpeas, drained and rinsed well
1/4 cup lemon juice (about 1 lemon)
2 garlic cloves, minced
3 tablespoons tahini
salt
2 tablespoons extra virgin olive oil
paprika to decorate
Directions:
1. Combine chickpeas, lemon juice, garlic and tahini in blender or
food processor and blend until smooth. Add water as necessary (start out with about a 1/4 cup and go up from there depending on how thick or thin you want it).
2. Pour hummus in serving dish and top with a sprinkle of paprika and the olive oil.
note: if you don't want to use canned beans you can cook 3/4 cup of dried chickpeas, and use some cooking liquid instead of the water.
you can also add sun dried tomatoes or cilantro to give it a little twist.
