Uncle Will's Foolproof Bloomer Loaf
500 g strong bread flour
7g dried yeast (1 packet)
10g tsp salt
2 tbsps olive oil (20 g)
320 ml / 1 1/3 cups cold water
Method
1. Mix all ingredients in a bread maker (or kitchen mixer with dough hook) until combined into a dough. (10 mins)

1. Mix all ingredients in a bread maker (or kitchen mixer with dough hook) until combined into a dough. (10 mins)
2. Let the dough rise ("prove") in the bread maker for 1.5 hours (or in a bowl covered with oiled cling film).
3. Remove from breadmaker, knock back (lightly knead) on a floured surface.
4. Form into bloomer loaf shape (oval) and place on a floured baking sheet or in a tin
5. Cover with a tea towel and let it prove for a further 30 mins at room temperature.
6. Preheat oven to 220C / 425F.
7. Cook for 25 mins.
Note: This loaf has no preservatives, it is best on the day of baking. If you find there is any left, it will keep for a few days in a bread bag.
