Gwyneth's two pan chicken

Now I freely admit that most of Gwyneth's recipe book is daft tosh (although seriously comedy to read) but I did a great recipe last night with a technique I would never have thought of.   Two Pan Chicken.

1) Take a medium sized chicken and spatchcock it (dead easy - see video on BBCGoodFood or get butcher to do it).   Make sure it is at room temp before cooking - v important!
2) if time, bung it in a plastic bag with garlic, lemon and olive oil for a few hours
3) Get two Le Creuset casseroles or cast iron casseroles - one large one small.   
4) Turn oven on high (500F. 225 C) and put little casserole in to preheat
5) glug of oil into large pan, chicken in skin side down and fry for 5 mins.
6) get little casserole, oil the bottom and lay it on top of chicken to press it down into the big casserole
7) 20 mins exactly in the oven, no more.   And leave to rest.

Briliant uber crispy whole roast chicken in 25 mins - so quick.   Nobody liked Gwyneth's "green olive and preserved lemon" salsa that went with it though!
