Oaty bites (can be vegan)
These are crunchy and delicious and a bit like Hob Nobs. A little bit dry - perhaps because I cut half the honey? Will experiment with adding banana or apple puree to make up for it next time
Adapted from Arrowhead Mills recipe
1 egg or egg substitute e.g. flax seed
113g / 0.5 cup melted butter (I used Earth Balance)
170g / 0.5 cup honey (I reduced to 85g / 0.25 cup for kids version)
125g / 1 cup oat flour
0.5 tsp baking soda / bicarbonate of soda
0.25 tsp salt
0.5 tsp cinnamon (or apple pie spice if you have it)
135g / 1.5 cups instant oatmeal (I used regular and just whizzed in the food processor to make oats finer)
60g / 0.5 cups chopped nuts (I used walnut), or use seeds for nut-free
1. Beat egg & add other liquid ingredients, blend.
2. Stir dry ingredients together and make certain there are no lumps
3. Add liquid ingredients & mix. Stir in oatmeal and nuts.
4. Drop heaped teaspoons onto lightly greased cookie sheets
5. Bake at 325 deg F for 12-15 mins. Allow to cool on sheet
