Teacher Sally's lovely bread


[this comes out light and lovely, a bit like ciabatta]

Basically (and every time it needs a little more water or a little more flour -- weather related perhaps? I watch it in the beginning of the cycle. More water, but still springy dough -- not sticky -- will make a flatter loaf)
 
240ml / 1 cup warm water (heat in microwave, don't use warm tap water)
375g / 3 cups flour (TS uses AP flour)
Yeast (I have scoop that came with the bread-maker so I just use that -- probably equal to a packet) (I used 1 tsp)
1 heaping teaspoon kosher salt
 
Once the bread is done rising, I dump it out onto a floured surface, fold it over a few times and roll (like a playdough snake) into a bread shape.
 
Brush your baking pan (I use a pizza pan that has holes in it) with olive oil, and let the dough rise for about 20 minutes. Score it in 3 places, and then paint it with olive oil until completely covered. Bake at 400-425 for 15-20. My oven is 1938 Chambers, so use your own judgement with your oven. I'm not sure my temps are completely accurate!
