Vegan Banana Cookies

Original Recipe Yield 3 dozen

Ingredients (makes 40)
3 ripe bananas 
180g / 2 cups rolled oats
150g / 1 cup dates, pitted and chopped (can sub in raisins or other dried fruit)
80g / 1/3 cup vegetable oil
1 teaspoon vanilla extract

1.5 x recipe (makes 60)
4.5 banana
270g oats
225g dates (1.5 cup)
120g oil
1.5 vanilla


Directions
  1. Preheat oven to 350 degrees F (175 degrees C). 
  2. In a large bowl, mash the bananas (or whizz in food processor). Stir in oats, dates (I usually whizz too)  oil, and vanilla. Mix well, and allow to sit for 15 minutes. 
  3. Drop by teaspoonfuls onto an ungreased cookie sheet (I used cookie spoon thing which makes little rounded "bites" rather than cookies)
  4. Bake for 20 minutes in the preheated oven, or until lightly brown.
Note: once made this with 20% rice krispies as didn't have enough oats, it was fine.
