Jenn's banana bread
113g / 1/2 cup / 1 stick butter
150g / 3/4 cup brown sugar (I reduced to 80g, still very sweet)
2 eggs beaten
5 ripe bananas mashed up
Optional - spoon of greek yog, vanilla essence
Optional - 3/4 cup nuts and/or choc chips
250g / 2 c. flour (can subst. 62g / 05.cup flour for 47g / 0.5 cup almond meal) white or 50/50
1 tsp baking soda
pinch salt (0.25 tsp)
- 9x5 loaf pan, 350F / 180C / 160C fan, 60 mins
- cream butter & sugar in large bowl
- add eggs & bananas
- add dry ingreds & mix
- Add extras
Note: very nice, moist, banana-y bread. I cut sugar to 80g, you could cut further esp for kids. Also made with 4 bananas due to shortage, also fine.
