Vegan apple oatmeal muffins


These are actually pretty tasty despite the lack of many ordinary ingredients. Takes a while to dice all the apples. Pleasingly wholesome and not too sweet. Nice one-bowl recipe too - start with a big bowl!


(I accidentally used double the amount of apple sauce - didn't seem to affect things adversely).


Ingredients

240g / 2 cups whole wheat flour
180g / 2 cups quick oats
150g / 3/4 cup Demerara or brown sugar
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
4oz / 1/2 cup unsweetened applesauce (1 pot)
1/2 cup canola oil
355ml / 1 1/2 cups soy milk
3 apples, peeled and diced into small pieces

Directions

  1. Preheat oven to 350°F. Grease muffin tin(s) and set aside.
  2. In a large bowl, mix together the flour, oats, sugar, cinnamon, baking powder and baking soda. 
  3. Add the oil, soy milk and applesauce, mix well. Stir in the diced apples.
  4. Fill the muffin cups 2/3 full with batter.
  5. Bake for 20-25 mins (12-14 mins for mini-muffins) or until a toothpick inserted in the centre comes out clean. 
  6. Let the muffins cool for a few minutes before removing from the tin. Allow to cool completely on wire racks.

Makes 14-16 muffins or 48 mini muffins
