Andrew's New York cheesecake
Mix 7oz crushed biscuits (hob nobs / digestive /nice / graham), with 2oz caster sugar (omit if biscuits are sweet) and 3 oz melted butter. Press in to 7" deep sandwich tin. You can add more biscuits if you like. Chill.
Beat 12 oz full fat philadelphia until creamy. Add two beaten eggs, 4 1/2 oz caster sugar, 1 tsp vanilla essence and 3/4 tsp lemon juice. Mix until smooth.
Pour over biscuit base and bake for 30 mins at 350F.
Remove from the oven, cool for 5 mins.
Mix 1/2 pint soured cream with 1 1/2 oz caster sugar and 1/4 tsp vanilla essence.
Pour over cheesecake and return to oven for 10 mins.
Leave to cool/refrigerate for at least 6 hours/overnight.
