Substitutions

Substitutions for butter or oil - Note: most recipes suffer from swapping out all the fat - try with half first.

Oil
  • Apple sauce for butter/oil - use 0.75 - 1 cups applesauce for 1 cup butter/oil.  
  • Drained crushed pineapple - ditto
  • Mashed ripe bananas - ditto
  • May need to adjust for sweetness ie reduce sugar
  • Yogurt - equal volumes - no need to adjust for sweetness (drain off any extra liquid)
  • 1 cup oil = 8 floz = 240ml oil
  • 4 floz applesauce = 1 pot = 1-1.3 cups oil = 240 - 305g/mil oil 
Sugar
  • Can reduce total sugar by 1/3 in most recipes
  • replace up to 2/3 sugar with apple sauce in ratio 1:1.3 volume (ie 1/3 more apple)
  • Reduce main liquid (ie milk) by 1/4 cup per cup of apple sauce
  • Adding extra vanilla can increase apparent sweetness if required. 
  • 4 floz sugar = 112g = 
  • 4 oz packet applesauce = 3floz sugar = 85g sugar
