Spinach pesto


Spinach Pesto (Makes 3/4 Cup Pesto)

50g Spinach, packed
25g Walnuts
25g Parmesan Cheese, grated
30g / 1 Tbsp Tofu, silken
1 Small Garlic Clove
80ml Olive Oil

1. Place all the ingredients in a food processor and puree until smooth.

Storage: in fridge, in airtight container with layer of oil on top.  
Lasts for: about a month
