Savoury flapjacks
These are wonderful. Everybody likes them, they are a complete food in a non-messy, portable package. Easy to make, freeze well.
- 200 g/7oz porridge oats
- 200 g/7oz grated carrot
- 200 g/7oz grated courgette (about 2 small courgettes)
- 200 g/7oz grated cheese
- 2 small onions finely chopped
- 2 eggs beaten
- 1 tsp dried thyme or sage
- 1/2 tsp pepper
- 1/2 tsp salt (optional)
- Preheat the oven to 190ºC/375ºF
- Grease a baking tray (Swiss roll tin size).
- Mix all the ingredients in the large bowl and press into the tray.
- Bake 25-30 minutes, until set and lightly browned. Also works spooned into mini-muffin tray about half full, bake for 20 mins.
Note: works with other veg too, e.g. sweet potato.
