Savoury flapjacks

These are wonderful.  Everybody likes them, they are a complete food in a non-messy, portable package.  Easy to make, freeze well.

  • 200 g/7oz porridge oats 
  • 200 g/7oz grated carrot 
  • 200 g/7oz grated courgette (about 2 small courgettes)
  • 200 g/7oz grated cheese 
  • 2 small onions finely chopped 
  • 2 eggs beaten 
  • 1 tsp dried thyme or sage 
  • 1/2 tsp pepper 
  • 1/2 tsp salt (optional)

  1. Preheat the oven to 190ºC/375ºF
  2. Grease a baking tray (Swiss roll tin size). 
  3. Mix all the ingredients in the large bowl and press into the tray. 
  4. Bake 25-30 minutes, until set and lightly browned.  Also works spooned into mini-muffin tray about half full, bake for 20 mins. 
Note: works with other veg too, e.g. sweet potato.
