What is a super mummy recipe?

Since having my beautiful daughter, I've found it hard to get anything approaching an edible meal on the table in the evening before 10pm. By the time I have got her settled, it's already pretty late, and if you are then prepping and cooking for 30 minutes plus then it's likely that my husband or me will have died of starvation, collapsed with exhaustion or started a huge row (or all three).

So, I have started trying to develop recipes which all GUARENTEE to be:
- under 10 mins prep time in advance (so you can prep when you have wrestled them into a nap, or in the 10-minute window of peace you may be lucky enough to get if they are watching you in the kitchen)
- with a long (40 min +) cooking time (so it can cook slowly while you are putting your baby to bed).  But not too long (under 1 hour) because you are hungry.
- be mostly designed for two people (let's be realistic, your social life is over) with option to extend to four if you have the energy to entertain.
- have very clear, simple instructions including when to chop the vegetables to optimise the use of your time. Because onions don't come chopped.
- include oven heating time, because ovens don't come pre-heated.
- provide practical store cupboard alternatives to key ingredients.
- use mainly ingredients that will last a while.
- use as few pans as possible.
- to be flexible enough to adapt to the contents of your fridge and give you confidence to experiment.
- designed to use sensible quantities of food where possible e.g. one can's worth.
- and, most importantly, to be proper lovely tasting and decent-sized portions.

Many are inspired by professional chefs and credit has been given. I have gone over the recipes to simplify the methodology as much as possible while retaining flavour and goodness. My goal wherever possible is to put everything in at once and get something lovely out of the oven 40 minutes later.
