Time saving tIps

Wine: you can freeze wine left overs (even if they have oxidised a bit they are still fine to cook with) in small freezer bags (breast milk bags are ideal as they have a double seal!). Just add to pan straight from frozen.

Defrosting: defrosting salmon and chicken in a hurry - avoid microwaving unless desperate. put in sink covered with warm water (in a waterproof bag/container).

Herbs: fresh herbs are always best, but dried are generally fine and much more practical. Look out for herbs like basil and corriander are prepared purees in oil in tubes.
Waitrose sell packets of prechopped frozen ginger, garlic, corriander, lemongrass, chilli etc - these are BRILLIANT, you can use them straight from frozen and the taste as good as fresh with a lot less faff.

Chopping: stick blenders are really useful. The blender is great for making soup, and the mini food chopping attachment is brilliant for tear-free onions, garlic and herbs.

Diets: use oil spray if you are trying to diet. Most recipes will work fine with low-fat versions where available e.g. creme fraiche, philadelphia.
